Mamma's Authentic Bruschetta Recipe courtesy Mamma Mia Ristorante, Dubai Marina

We at Mamma Mia Ristorante & Pizzeria really like taking care of our loyal fans. Here’s a little something straight out of Mamma’s kitchen (Mamma’s recipes are a traditional family secrets and convincing her to share them was not an easy task!) for those of you who relish Italian cuisine and would love to have a cook-in once in a while with loved ones.  

Here’s a simple and tasty cook-it-yourself Bruschetta recipe to impress your guests!

FIRST
In a bowl, make a mixture of:
chopped fresh tomatoes (small pieces)
chopped basil (as much as suits you)
olive oil and balsamic vinegar (not too soupy, taste it to get an idea)
minced garlic (as much as suits you)
a dash of salt.
(adjust ingredient quantities to YOUR taste)
Let mixture sit awhile so tomatoes absorb flavors. We let it sit over an hour.

SECOND
(Time this shortly before serving)Prepare the toasted bread by slicing a baguette (or your favorite long bread loaf) into slices about 1/2" thick. (You may want to cut the slices in half, depending on the size of the loaf. Final product is meant to be picked up as finger food.)
Brush pieces with olive oil and shake on a little garlic powder and some grated parmesan cheese. (Not a lot of garlic as you put some in the tomato mixture.)
Toast it in the oven until it just browns, at 350F degrees.
Spoon the tomato mixture on the toasted bread slices and serve!

Ramadan Things To Do in Dubai!

Ramadan Mubarak!

Mamma Mia Ristorante and Pizzeria's taken a moment out of our cooking schedule to work out a few things you can do during the Holy Month of Ramadan. There's a little something here for all....travellers, residing Expats and Emiratis! Hope this keeps you busy and helps you fill in your days and free time with the spirit of the month!

Understand the Arab Culture & Learn the Language!
Dubai is a muslim city based on Islam. The country harbours a diversity of cultures and religions, however, we must remember to be respectful of the local beliefs and practices during the month. Things you should abstain for during the month are: dressing provocatively, public displays of affection, eating/drinking in public until Iftar and cursing or instigating arguments among the main. In a way, it's a great excuse for non-muslim and expats as well to look within and gain inner peace, live a healthier lifestyle as well as re-learn the virtue of patience and open one's mind to different cultures. A great thing to do in your free time would be to try learning the Arabic alphabet...after all, another language under your belt is a great achievement!

Get your good side in the working!
A main attribute of Ramadan is charity and helping the less fortunate. Look up a few charitable institutes in Dubai and overseas countries (check with Unicef, Al Noor, Dubai Autism Center, Dubai Cares, Zayed Foundation...to name a few). You don't have to make a heafty donation...every dirham counts! If you're still not keep on letting go of your money to sources you don't know, call up a charitable institution and set up spending a day over among the children or old-aged. Your time's an investment that will put a smile to their faces!

Meet family and friends more often...no man's an island!
